The executive chef at Peace Laguna Resort and Spa in Ao Nang, Mr Nikom Sangtara, is heading to the national finals of the Siam Makro HoReCa culinary challenge at the end of this month.
Chef Nikom won the southern Thailand regional heat of the competition, held in Surat Thani in July this year, wowing the judges with his original creation of a deconstructed Massaman curry. The dish, consisting of braised chicken wings, stuffed with minced seafood and served with pressed sweet and new potatoes, fish caviar and scallops, with a massaman sauce, was considered to be a masterful blending of two elements of traditional local cuisine – the classic massaman curry, and fresh seafood.
The annual contest is open to talented chefs from any hotel, restaurant or catering service in Thailand; Chef Nikom says he was both surprised and proud to win the regional heat, as he was competing against high calibre chefs from 5 star international hotels in Phuket, Samui and Krabi. The final “cook-off”, with the six regional winners, will take place in Bangkok from 31 October – 3 November at the Makro HoReCa 2013 expo, held at Impact Exhibition Hall in Muang Thong Thani.
The winning chef, aside from the title of “Thailand’s best”, will take home 100,000 baht, a trophy from HRH Princess Soamsawali, and go on to represent Thailand in the Food & Hotel Asia 2014 culinary competition in Singapore next year.
